3 Ingredient Energy Balls [RECIPE]

These delectable balls are paleo, dairy free, refined sugar free, gluten free, grain free, soy free, and even animal cruelty free. (Woohoo!) But do you know what it’s FULL of? Flava. And nuts. Allergic people beware. Feel the health course through your pseudo-vegan veins as you nibble on these bite-sized balls of bliss. Can’t stand the heat? Good – this recipe doesn’t require any. Throw on your yogi pants and grab the ingredients.

INGREDIENTS

  • 2 cups walnuts (or nuts of choice) – salty, RAW, whatever 😉
  • 2 cups soft Medjool dates (pitted)
  • 2 tablespoons coconut oil

OPTIONAL INGREDIENTS

  • 1 cup shredded unsweetened coconut
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • Cocoa or cacao powder

^note on optional ingredients: the energy balls i made in the photos include shredded unsweetened coconut and cacao powder. I have made this recipe before with only the 3 ingredients, and they still turn out delicious. Sea salt and vanilla extract can be added to taste.

INSTRUCTIONS

(separated step-by-step. It’s a VERY easy recipe)

^Note for the photos: I made these for the cast and crew of the show, so the photos don’t follow the recommended amount of ingredients. I also pressed the mixture into a large pan and cut them into squares (rather than rolling them into balls). The ratio and process remains the same.

  1. Gather the ingredients
  2. Using a food processor with an ‘S’ blade, process the nuts until crumbly. (A powerful blender works too)
  3. Add the dates and coconut oil into the food processor until the mixture becomes a moldable consistency.
  4. If you’re having trouble processing the dates, try hand-chopping them into smaller pieces before adding them.
  5. Transfer the mixture out of the food processor into a large bowl.
  6. Scoop mixture by heaped tablespoons, use hands to roll dough into round ball shape. (Or in my case, place the mixture into a large, flat pan)
  7. Note – regardless of the shape, make sure to add pressure to pack the ingredients tightly, otherwise it will fall when served.
  8. Arrange on sheet lined with parchment paper, place in freezer to set (at least an hour). Wrap for protection if necessary.
  9. Feed the people!! Make sure to take credit if they’re delicious, and blame someone else if they’re horrible.

 

NOTES

For an added twist, roll the balls in toppings like shredded coconut, cocoa powder, etc. As mentioned, the treats pictured included the optional ingredients of shredded unsweetened coconut, and cacao powder.

Store them in a container for up to a week in the refrigerator, and even longer if placed in the freezer.

Pro Tip: this recipe turns out 110% better if you have a full face of makeup on.
